In 2013, the Food Safety Laboratory of Ocean University of China and the State Key Laboratory of Beer Biological Fermentation Engineering jointly conducted research on the application of hypochlorous acid water (electrolyzed water) technology in CIP disinfection of beer production.
Laboratory results show that hypochlorous acid water (electrolyzed water) with an effective chlorine concentration of more than 17 ppm (pH 2.4-3.2, ORP>1100mV) treated for 5 minutes has excellent killing effect on Bacillus subtilis, Saccharomyces cerevisiae, and Lactobacillus brevis. , its bactericidal ability can reach the same level as 2% peracetic acid.
The results of on-site CIP cleaning experiments show that using hypochlorous acid water (electrolyzed water) with an effective chlorine concentration of 17 ppm for 10-15 minutes of circulating cleaning can achieve a good pipeline disinfection effect without the need for clean water for flushing.
